Kohlrabi Salad with Spicy Peanut Dressing

Serves: 2-4 | Time: 20 minutes

This salad is a great way to eat spring kohlrabi, radishes, lettuce, and scallions! Add a protein like chicken breast to make it a full meal. 

INGREDIENTS

For the salad:

  • 1 head red lettuce
  • 2 medium kohlrabi, peeled and cut into matchsticks
  • 2 or 3 radishes, cut into matchsticks
  • sliced scallions
  • sesame seeds
  • sliced almonds

For the dressing:

  • 1 clove garlic, minced
  • 1 tablespoon peanut butter
  • 1 teaspoon maple syrup or honey
  • 1/8 teaspoon minced fresh ginger root
  • 1 teaspoons apple cider vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon sriracha or gochujang
  • 1 teaspoon soy sauce or tamari

DIRECTIONS

1. Wash the lettuce, tear into bite sized pieces, and dry in a salad spinner. Assemble in a bowl along with the kohlrabi and radishes.
2. Add garlic, peanut butter, maple syrup or honey, ginger, vinegar, oil, sriracha or gochujang, and soy sauce and mix well.
3. Drizzle dressing over the salad. Garnish with scallions, sesame seeds, and sliced almonds.
