SLO Farmers Co-opOctober 6, 2026 No Comments
Chopped chicken salad in glass bowl

Whether you eat it on crackers or serve as a sandwich, chicken salad is protein-packed and refreshing. Plus, there’s an endless number of variations so if you mix it up enough, it’ll never be boring.

Here’s a recipe submitted by one of our farmers!

With SLO CSA shares you can get the chicken, turnips or radishes, tomatoes, onions, cucumbers, fresh herbs, sweet peppers, and apples. Of course, the availability of these depends on the season.

Prep: 20 minutes

INGREDIENTS

Chicken Salad

  • 2 c pulled chicken
  • 1 c tomato, chopped
  • 1 c sweet pepper, chopped
  • 1 c radish of choice, chopped
  • 1 c cucumber or celery, chopped
  • 1 c apple, chopped

Dressing

  • ½ c mayo
  • Juice of 1 lemon
  • 2 T dill or fresh herb, chopped
  • Salt and pepper
  • (Optional) 1/2 red onion, finely chopped

DIRECTIONS

  1. Chop veggies and place in a large bowl.
  2. Mix dressing ingredients in a separate container, then toss with veggies.
  3. Refrigerate for half hour before serving, add more dressing if too dry.
  4. Serve on crackers or as a sandwich on toasted bread.
  5. Store covered in fridge for 3-5 days

NOTES

Add a finely chopped jalapeño for a kick!

Swap between french breakfast radish, daikon radish, black spanish radish, watermelon radish, scarlet radish, and hakurei turnip to make each chicken salad you make unique.

Add microgreens for color and freshness and extra nutrition!
