Sugar Snap Pea Salad with Strawberry Vinaigrette

Serves: 4 | Time: 20 minutes

This simple strawberry vinaigrette is excellent with seasonal strawberries. Any extra dressing can be stored in an airtight container in the fridge.

INGREDIENTS

For the salad

  • 6 oz salad mix (or substitute any lettuce variety)
  • 10-15 sugar snap peas, stems and strings removed and cut into 1/4 inch slices
  • Chopped walnuts, almonds or pecans
  • Grated parmesan cheese or goat chevre broken into pieces
  • Salt and pepper

For the vinaigrette

  • 1 cup fresh strawberries, stems removed and cut in half
  • 2 tablespoons balsamic vinegar
  • 1/2 cup extra virgin olive oil
  • 1 or 2 tablespoons honey or maple syrup (adjust according to taste)
  • 2 tablespoons chopped fresh herb like marjoram, basil or thyme

DIRECTIONS

  1. Wash and spin the lettuce and place in a large bowl. Add the peas, nuts and cheese. Set aside.
  2. Using either an immersion or regular blender, blend the strawberries, balsamic vinegar, olive oil, honey or maple syrup, and herbs on low speed until the ingredients are combined.
  3. Drizzle vinaigrette over the salad. Add salt and pepper to taste and serve.
