This simple strawberry vinaigrette is excellent with seasonal strawberries. Any extra dressing can be stored in an airtight container in the fridge.
INGREDIENTS
For the salad
- 6 oz salad mix (or substitute any lettuce variety)
- 10-15 sugar snap peas, stems and strings removed and cut into 1/4 inch slices
- Chopped walnuts, almonds or pecans
- Grated parmesan cheese or goat chevre broken into pieces
- Salt and pepper
For the vinaigrette
- 1 cup fresh strawberries, stems removed and cut in half
- 2 tablespoons balsamic vinegar
- 1/2 cup extra virgin olive oil
- 1 or 2 tablespoons honey or maple syrup (adjust according to taste)
- 2 tablespoons chopped fresh herb like marjoram, basil or thyme
DIRECTIONS
- Wash and spin the lettuce and place in a large bowl. Add the peas, nuts and cheese. Set aside.
- Using either an immersion or regular blender, blend the strawberries, balsamic vinegar, olive oil, honey or maple syrup, and herbs on low speed until the ingredients are combined.
- Drizzle vinaigrette over the salad. Add salt and pepper to taste and serve.
