Tomato, Shrimp & Cucumber Crostini

Serves: 2 | Time: 20 minutes

This recipe can be an appetizer or a light meal. Just toast more slices of bread and chop up more veggies to serve more. For even more flavor, marinade shrimp ahead of time in some olive oil, lemon juice and herbs.

INGREDIENTS

  • 1/4 loaf French or Italian bread
  • 2 cups cooked cold shrimp, chopped (fresh or frozen work fine)
  • 2 cups cherry tomatoes, sliced or chopped (or any tomato variety you have around)
  • 1/2 cucumber, thinly sliced (and seeded optional)
  • 2-3 lemon wedges
  • butter or olive oil
  • parmesan or mozzarella (optional)
  • salt to taste
  • chives or favorite herb to garnish

DIRECTIONS

  1. Turn oven (or toaster oven) to broil
  2. Slice bread into 1/2 inch slices. Spread butter or oil on each. Add optional cheese.
  3. Broil or toast bread slices until edges start to brown.
  4. While bread toasting, prep veggies and shrimp
  5. Remove crostini from the oven and let cool. Assemble shrimp, tomatoes and cucumbers on each piece.
  6. Add a squirt of lemon, a little salt and garnish to top them off!
