Shan’s Summer Stir Fry

What better way to enjoy all the fresh and crispy summer veggies than a stir fry? Substitute or add other veggies from your kitchen. Marinate meat ahead of time for extra flavor.

INGREDIENTS

  • 1 lb Full Circle Community Farm stew meat (cut across grain in 1⁄2 chunks)
  • 1 lb green beans
  • 1 pint mushrooms of choice
  • 1 bunch carrots (sliced in equal sizes)
  • 2 fresh onions (greens and whites chopped)
  • 1 bunch kale (de-ribbed and ripped in equal
    pieces)
  • Juice of half a lemon
  • Oil with high smoke point
  • Soy sauce
  • Honey
  • Chives or Green onions

DIRECTIONS

  1. Lightly coat a wok with oil. Cook stew meat, mushrooms and whites of onion on medium high until meat is cooked to medium. Use a slotted spoon to remove meat and mushrooms and set aside.
  2. Add carrots and beans to wok and cook for about 2 minutes.
  3. Add the kale and onion greens and cook for another minute.
  4. Put the meat mixture back in the pan and add squeeze of lemon, soy sauce, and honey to taste. Top with chopped chives or scallions.
