INGREDIENTS
Salad Ingredients
- 1 6-oz bag Salanova salad mix
- ½ lb fresh green beans, cut in 1 inch pieces
- 1 pint snap peas
- 1 pint cherry tomatoes, halved
- Plant-based ranch dressing
- Squeeze of half a lemon
- Salt & pepper to taste
- Microgreens to top, optional
Crouton Ingredients
- 6 slices of day old bread or equivalent
- 3 T olive oil
- 1 cup fresh mushrooms, in ½ inch pieces or dried
- 1 T Garlic powder
- Salt and pepper to taste
DIRECTIONS
- Preheat oven to 300 degrees
- Toss crouton ingredients in mixing bowl until coated (leave out mushrooms if using dried)
- Spread on a baking sheet and bake 20+ minutes until crunchy and slightly browned
- Toss all salad ingredients in a large salad bowl and place in fridge while croutons cool
- Serve in salad bowls and top with crouton mushroom mixture and garnish with microgreens!
