Salanova Salad with Mushroom Croutons

Serves 4

INGREDIENTS

Salad Ingredients

  • 1 6-oz bag Salanova salad mix
  • ½ lb fresh green beans, cut in 1 inch pieces
  • 1 pint snap peas
  • 1 pint cherry tomatoes, halved
  • Plant-based ranch dressing
  • Squeeze of half a lemon
  • Salt & pepper to taste
  • Microgreens to top, optional

Crouton Ingredients

  • 6 slices of day old bread or equivalent
  • 3 T olive oil
  • 1 cup fresh mushrooms, in ½ inch pieces or dried
  • 1 T Garlic powder
  • Salt and pepper to taste

DIRECTIONS

  1. Preheat oven to 300 degrees
  2. Toss crouton ingredients in mixing bowl until coated (leave out mushrooms if using dried)
  3. Spread on a baking sheet and bake 20+ minutes until crunchy and slightly browned
  4. Toss all salad ingredients in a large salad bowl and place in fridge while croutons cool
  5. Serve in salad bowls and top with crouton mushroom mixture and garnish with microgreens!
