Power Bowl with Green Goddess Dressing

Serves: 4-6 | Prep time: 5 minutes
Adapted from Love and Lemons Green Goddess Dressing recipe. 

This Green Goddess Dressing goes perfectly drizzled over a veggie-filled power bowl! The formula for building a great power bowl can be found below. Feel free to mix and match the elements according to your taste and what you have available in the fridge and pantry. The power bowl pictured uses quinoa as the base. I added green summer crisp lettuce, sliced cucumber, radish, zucchini, bell pepper, steak, and topped it with more fresh dill and microgreens. 

INGREDIENTS

  • 1 cup plain whole milk yogurt
  • 1 cup parsley, long stems removed
  • 1 cup of mixed herbs such as basil, cilantro, and/or dill
  • 2 tablespoon chopped chives
  • 2 tablespoons freshly squeezed lemon juice + 1/2 teaspoon lemon zest
  • 1 tablespoon extra virgin olive oil
  • 1 or 2 garlic cloves
  • 2 teaspoon capers
  • 1/4 teaspoon sea salt
  • Freshly ground black pepper

DIRECTIONS

  1. Combine all ingredients in a blender or food processor. Pulse until well-combined.
  2. Assemble the power bowl (see below) and drizzle dressing on top.

 

Build your power bowl! You can cook the grains and legumes in advance and just pull them out of the fridge when you’re ready to assemble your bowl.

Start with about 1/2 cup of a cooked grain as your base: brown, black, or wild rice, barley, quinoa, farro, buckwheat

Add about 1/4 to 1/2 cup of a legume: chickpeas, lentils, beans

Throw in a handful or two of leafy greens: lettuce, spinach, chard, kale, arugula

Fill the bowl to your heart’s content with fresh or roasted veggies: zucchini, cucumber, radish, bell pepper, roasted potatoes, corn, carrot, fennel, brussels sprouts, broccoli, cauliflower

Include a serving of protein: steak, chicken, tinned fish, hard-boiled egg, tofu, tempeh

Toss in some toppings: microgreens, chives or other herbs, chopped scallions, nuts or seeds, avocado, shredded or crumbled cheese, dried cranberries or other fruit

Drizzle Green Goddess Dressing (or other dressing of your preference) over the top and enjoy!
