Napa Cabbage Salad with Carrot Ginger Dressing

Serves: 8 people | Total Time: 30 minutes

This delicious salad dressing pairs great with napa cabbage and bright watermelon radish for a healthy, fresh, and colorful salad. In-season pear balances the flavors with its sweetness.

INGREDIENTS

For the dressing:

  • About 1 medium carrot, roughly chopped (approximately 1 cup)
  • 2 tablespoons ginger, peeled and roughly chopped
  • 1 tablespoon fresh lemon or lime juice
  • 1 tablespoon honey
  • ¼ cup rice vinegar or 3 tablespoons apple cider vinegar
  • ¼ cup olive oil
  • A dash of salt

For the salad:

  • Napa cabbage leaves, cut in half lengthwise and thinly sliced to ⅛-¼ inch
  • Watermelon radish, cut into matchsticks
  • Pear, thinly sliced
  • Microgreens
  • Sesame seeds

DIRECTIONS

  1. Place carrot, ginger, citrus juice, honey, vinegar, olive oil, and salt in a blender. Puree until smooth. You may add a little water if it needs thinning out.
  2. Place the napa cabbage in either a serving bowl or individual salad bowls. Arrange the watermelon radish, pear, and microgreens on top. Drizzle with the dressing and sprinkle with sesame seeds.
