Miso Roasted Turnips and Radishes

Serves: 2-4 as a side dish | Time: 1 hour

In this dish the honey adds sweetness to cut any bitterness, and miso paste gives it a rich umami flavor. These roasted turnips and radishes can be served as a side dish, or would be a great element to have in a nourishing power bowl alongside other veggies, grains and proteins.

INGREDIENTS

  • 1 lb scarlet turnips, watermelon radish, or a combination of the two
  • 2 Tablespoons coconut oil
  • 1 Tablespoon honey
  • 1 Tablespoon miso paste
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon sesame seeds
  • Sea salt to taste

DIRECTIONS

  1. Preheat oven to 375 degrees. Cut turnips and/or radish into wedges and arrange on a baking sheet.
  2. If the coconut oil is solidified, heat it until just melted. Mix coconut oil, honey, and miso paste in a bowl. Drizzle over the radish and turnip on the baking sheet, sprinkle the red pepper flakes over the top, and toss it all to coat.
  3. Roast uncovered for 30 minutes. Remove pan from oven. Toss in sesame seeds.
  4. Roast for an additional 10-15 minutes.
  5. Season with sea salt, if desired, and serve.
