Heritage Breed Pork from SLO Farmers

Almost all pork raised in the US is from Yorkshire pigs. These pigs grow quickly and are lean. Our co-op farmers raise heritage breeds, Berkshire and Tamworth. Unlike commercial pork operations where pigs are raised totally inside, our pigs have access to the outside year round and are on pasture when weather permits. This makes the meat firm and adds to the flavor.

Uncured

You’ll notice that the bacon and ham are marked “uncured.” The USDA defines bacon as cured when added synthetic nitrates or nitrites are used, so bacon without added chemicals is considered uncured. Our processors use natural celery powder to cure (kill bacteria) the meat and give it that familiar flavor. You can eat the deli and other ham without heating it. Be careful not to overheat the ham as it will get dry. It helps to use a meat thermometer. Safe cooking tips for ham.
