Garlic Scape and Lemon Pasta

Serves: 4 | Time: 30 minutes

Add spinach, kale or a protein to this versatile dish!

INGREDIENTS

  • 8 ounces spaghetti (or your favorite pasta)
  • 1.5 cups garlic scapes, chopped
  • 3 tablespoons olive oil
  • 1 tablespoon butter
  • 3 tablespoons lemon juice, divided
  • 2 teaspoons lemon zest
  • 1/2 cup grated parmesan
  • salt and pepper to taste
  • garnish with cilantro, scallions or favorite herbs

DIRECTIONS

  1. Cook pasta according to package directions to el dente. Reserve 1/2 cup of pasta water
  2. While pasta is cooking, heat a tablespoon of olive oil in a medium skillet over medium heat. Add the garlic scapes and cook for 7 to 9 minutes, stirring occasionally until lightly browned. Stir in the butter and tablespoon of lemon juice.
  3. Place drained pasta and cooked garlic scapes back into the pot that you used to cook the pasta. Stir in remaining lemon juice, olive oil, lemon zest, parmesan and salt & pepper. Add small amounts of pasta water to thin to desired consistency.
  4. Garnish with more grated cheese, scallions or herbs
