Fried Zucchini

This recipe comes straight from one of our CSA members! We love seeing what our community is cooking using veggies from their CSA shares.

INGREDIENTS

  • 3 small zucchinis, cut into ½ inch cubes
  • 2-3 Tbsp avocado oil
  • ½ cup sourdough starter, discard or freshly fed
  • 1 tsp garlic powder
  • ½ tsp paprika
  • Salt and pepper to taste

DIRECTIONS

  1. Preheat a large cast iron skillet on the stovetop over medium-high heat.
  2. While skillet is heating, add cubed zucchini, sourdough starter, and spices to a large bowl. Stir to combine.
  3. Add avocado oil to skillet and let it heat for 20 seconds.
  4. When oil is hot, pour zucchini mixture in the skillet and evenly distribute in a thin layer. Cook undisturbed and uncovered for 3-5 minutes or until the underside is golden brown.
  5. Flip zucchini with a spatula and cook again for 3-5 minutes. You may repeat this once more if needed until all sourdough starter is cooked through.
  6. Serve immediately as is or with fresh herbs and parmesan sprinkled on top.
