Bacon, Mushroom, and Barley Side Dish

INGREDIENTS

  • 1 cup dry black barley
  • 3 strips of bacon
  • 1 cup cremini mushrooms, sliced
  • 1 small yellow onion, chopped
  • 3 cloves of garlic, minced
  • 1-2 tsp coconut aminos
  • Salt and pepper to taste

DIRECTIONS

  1. Add 1 cup of black barley (or other grain), 4 cups of water, and ½ tsp salt to a medium saucepan over medium heat.
  2. Simmer for 40 minutes or until grains open.
  3. Pour off excess water and set aside.
  4. Cook bacon in a skillet until almost crisp.
  5. Remove bacon and chop into pieces.
  6. Add mushrooms and onion to bacon fat and sauté until softened. Add garlic and cook until fragrant.
  7. Combine barley, bacon, mushrooms, onion, and garlic into one pot over low heat.
  8. Add coconut aminos, salt, and pepper and stir for 1-2 minutes. Serve immediately.
