INGREDIENTS
- 1 cup dry black barley
- 3 strips of bacon
- 1 cup cremini mushrooms, sliced
- 1 small yellow onion, chopped
- 3 cloves of garlic, minced
- 1-2 tsp coconut aminos
- Salt and pepper to taste
DIRECTIONS
- Add 1 cup of black barley (or other grain), 4 cups of water, and ½ tsp salt to a medium saucepan over medium heat.
- Simmer for 40 minutes or until grains open.
- Pour off excess water and set aside.
- Cook bacon in a skillet until almost crisp.
- Remove bacon and chop into pieces.
- Add mushrooms and onion to bacon fat and sauté until softened. Add garlic and cook until fragrant.
- Combine barley, bacon, mushrooms, onion, and garlic into one pot over low heat.
- Add coconut aminos, salt, and pepper and stir for 1-2 minutes. Serve immediately.
