RabiSlaw made with grated kohlrabi, carrots, cabbage, and seeds in a glass bowl

This sweet and crunchy kohlrabi slaw makes a great side dish or add to your sandwiches, burgers, or tacos! You can get the kohlrabi, carrots, red/green cabbage, and garlic in your SLO CSA share (depending on the season).

Prep: 20 minutes

INGREDIENTS

For the slaw:

  • 1 large kohlrabi (peeled & grated)
  • 3-4 medium carrots (grated)
  • Seeds of choice: sunflower, sesame, poppy, etc.

For the dressing:

  • 1 cup mayo
  • 2 Tbsp apple cider vinegar
  • 1 tsp sugar
  • 2 Tbsp Dijon mustard
  • 1/2 tsp salt
  • 1/2 tsp black pepper

DIRECTIONS

  1. Wash, peel, and grate kohlrabi and carrots.
  2. In a small mixing bowl, whisk dressing ingredients together.
  3. Pour dressing in a large bowl with kohlrabi and carrot. Mix well and top with seeds.
  4. Serve cold.

Store in an airtight container in the fridge for up to 3 days. Does not freeze well.
