Beef Hash with Egg

Ground beef and roasted potatoes mixed together topped with an over-easy egg and chives

Enjoy a hearty start to the day!

Potatoes can be cooked separately in an air fryer or baked in an oven for crispier pieces. Add cheese on top or mushrooms to the beef for even more flavor!

INGREDIENTS

  • 1 lb pastured ground beef
  • 2 medium shallots, finely chopped
  • 6-8 medium potatoes, cut in 1 inch chunks
  • 2 eggs (duck or chicken)
  • 1 T garlic powder
  • 1 t smoked paprika
  • 2 T Olive oil
  • Salt and pepper to taste
  • Chives or scallions to garnish

DIRECTIONS

  1. Soak potatoes in water for ten minutes. Pat dry with a towel.
  2. Toss in a bowl with a tablespoon of olive oil, garlic powder, paprika and salt and pepper.
  3. Cook in air fryer or oven at 350 degrees for 20 minutes or until cooked through with brown edges.
  4. While potatoes are cooking, add 1 tablespoon of oil to a large frying pan. Add shallots and cook on medium until they begin to soften.
  5. Add ground beef to the pan and cook with the shallots until beef is browned. Be careful not to burn the shallots.
