Duck Egg & Heirloom Tomato Sandwich

2 pieces of marbled rye bread, one piece has sliced golden heirloom tomatoes, the other piece has spinach with fried duck duck on top

Serves: 1 | Time: 10 minutes

INGREDIENTS

  • 2 slices of hearty bread
  • 1 duck egg or 2 chicken eggs
  • 4 thick slices heirloom tomato
  • 1 or 2 ounces baby spinach or salad mix
  • 1 T sandwich oil
  • 1 T olive oil
  • Salt & Pepper to taste

DIRECTIONS

  1. Swirl olive oil in a small frying pan
  2. Crack egg(s) into pan and break yolk(s)
  3. Turn up heat to medium, add salt and pepper and fry until edges brown
  4. Toast bread and assemble by making a bed of greens on the first slice.
  5. Drizzle greens with sandwich oil
  6. Lay fried egg on greens, layer tomatoes next and top with other toasted slice of bread.
  7. Cut diagonally and enjoy! Don’t forget to make one for a friend!

Tip

For this sandwich I used a Brandywine Yellow heirloom tomato and marble rye bread. Any slicing tomato will work and taste great on Voyagers sourdough bread!
