INGREDIENTS
- 3 small zucchinis, cut into ½ inch cubes
- 2-3 Tbsp avocado oil
- ½ cup sourdough starter, discard or freshly fed
- 1 tsp garlic powder
- ½ tsp paprika
- Salt and pepper to taste
DIRECTIONS
- Preheat a large cast iron skillet on the stovetop over medium-high heat.
- While skillet is heating, add cubed zucchini, sourdough starter, and spices to a large bowl. Stir to combine.
- Add avocado oil to skillet and let it heat for 20 seconds.
- When oil is hot, pour zucchini mixture in the skillet and evenly distribute in a thin layer. Cook undisturbed and uncovered for 3-5 minutes or until the underside is golden brown.
- Flip zucchini with a spatula and cook again for 3-5 minutes. You may repeat this once more if needed until all sourdough starter is cooked through.
- Serve immediately as is or with fresh herbs and parmesan sprinkled on top.
