INGREDIENTS
- 8 ounces spaghetti (or your favorite pasta)
- 1.5 cups garlic scapes, chopped
- 3 tablespoons olive oil
- 1 tablespoon butter
- 3 tablespoons lemon juice, divided
- 2 teaspoons lemon zest
- 1/2 cup grated parmesan
- salt and pepper to taste
- garnish with cilantro, scallions or favorite herbs
DIRECTIONS
- Cook pasta according to package directions to el dente. Reserve 1/2 cup of pasta water
- While pasta is cooking, heat a tablespoon of olive oil in a medium skillet over medium heat. Add the garlic scapes and cook for 7 to 9 minutes, stirring occasionally until lightly browned. Stir in the butter and tablespoon of lemon juice.
- Place drained pasta and cooked garlic scapes back into the pot that you used to cook the pasta. Stir in remaining lemon juice, olive oil, lemon zest, parmesan and salt & pepper. Add small amounts of pasta water to thin to desired consistency.
- Garnish with more grated cheese, scallions or herbs
