This delicious salad dressing pairs great with napa cabbage and bright watermelon radish for a healthy, fresh, and colorful salad. In-season pear balances the flavors with its sweetness.
INGREDIENTS
For the dressing:
- About 1 medium carrot, roughly chopped (approximately 1 cup)
- 2 tablespoons ginger, peeled and roughly chopped
- 1 tablespoon fresh lemon or lime juice
- 1 tablespoon honey
- ¼ cup rice vinegar or 3 tablespoons apple cider vinegar
- ¼ cup olive oil
- A dash of salt
For the salad:
- Napa cabbage leaves, cut in half lengthwise and thinly sliced to ⅛-¼ inch
- Watermelon radish, cut into matchsticks
- Pear, thinly sliced
- Microgreens
- Sesame seeds
DIRECTIONS
- Place carrot, ginger, citrus juice, honey, vinegar, olive oil, and salt in a blender. Puree until smooth. You may add a little water if it needs thinning out.
- Place the napa cabbage in either a serving bowl or individual salad bowls. Arrange the watermelon radish, pear, and microgreens on top. Drizzle with the dressing and sprinkle with sesame seeds.
